Blogging

Hello Everyone,

About a year ago, I have been tested and diagnosed with food intolerance and diverse food allergies. First, when I heard that I have some food allergies, I though "yeah ok not a big deal, many people have such issues." It was before I have seen the list my doctor proudly hold in his hands. I listened carefully and I started to panic. I didn't just have some kind of an allergy. I had to say good by to all diary products (including yoghurt), egg, everything with gluten, beef, pork and various fruits. It's already a long list, but considering that I refuse to eat rabbit, lamb or wild animals... the list of potential food sources were really limited. Loving social outings, trying gourmet restaurants, eating well, I had little idea on what this medical record will bring on me. 
My initial shock turned into desperation when I have realized, that even if I try my best to opt for conscious choices, in most of the shops & restaurants there was nothing on the menu for me. Back then I was constantly on the road, so petrol stations were my main food sources during the day and now this easy to kill your hunger options were off of my list. With willpower and determination, I was constantly looking for the best option, until my hunger conquered me or I managed to get home. The first month was hard, the new diet had a more profound impact on my life as I could have ever imagine it.
Soon I have noticed, how complicated the modern kitchen is. It was relatively easy to find meatless options, but incredible hard to find anything without cheese, cream or egg. My biggest enemy became egg-white, which turned out to be an ingredient of almost every ready made food. (I still struggling to understand since when do you need added egg-white powder to your guacamole and potato starch, but this is another topic.) I started to check every label, ingredient, added extras in the supermarket. Two things happened: a. food shopping took three times as much time as it used to. b. I have realized how much chemicals, unnecessary added ingredients, preservatives do we eat with our food. 
After turning off my used to be favorite petrol station's offer swimming in sugar & salt, unable to pick anything in the office restaurant besides salad, I came to the realization, that I must take action over my food issue, if I don't want to starve to death or chew on salad until the rest of my life. And so I started to cook, learn about new ingredients, new ways of cooking, simplifying and changing my recipes and creating new ones following the medical restrictions.
This blog is about these recipes, because I love food, I love to cook and I want to help others, who are struggling with food allergies. I am a firm believer, that good food can taste well and that everyone has a right to good quality, clean, GMO free food.
